Pear & Pomegranate Salad with Orange Poppyseed Vinaigrette

This salad is loaded up with juicy pear, tart pomegranate, pecans, feta, all on a bed of fresh baby spinach and drizzled with a citrus orange poppyseed vinaigrette

Ingredients

  • 3 cups packed baby spinach
  • 1 pear sliced or chopped per preference
  • 1/4 cup pomegranate arils
  • 1/4 cup crumbled feta cheese
  • 1/4 cup pecan halves

Orange Poppyseed Vinaigrette

  • 1/3 cup fresh orange juice
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1 tablespoon poppyseed
  • 1 tablespoon honey

Instructions

  1. For the salad, add the spinach to a large bowl and layer the remaining ingredients on top.

Orange Poppyseed Vinaigrette

  1. Add all ingredients to a medium size jar. Tighten the lid and shake until thoroughly mixed.
  2. Drizzle over salad. Toss to combine. Serve immediately and enjoy!
